Bombora.
Water white. Creamy coconut milk and lifted spiritus aromas with a hint of aniseed. The palate has rich, warm, luscious coconut flavours with a distinctive Rum flavour that lingers on the palate.

BROTHERSPORT. Golden tawny in colour. Inviting aromas of dried mixed fruit peel combine with caramel and a touch of nutty rancio complexity. The spicy fruit and toffee flavours are ripe and vibrant finishing with rich smoky oak characters.

VINIFICATION: This wine gives our winemakers the chance to showcase their patience and blending ability to achieve ultimate balance. This wine is a labour of love which draws on the tradition and passion of our region and winery's winemaking heritage. The wine is matured in a traditional tiered solera system of barrels, each 100 gallons in capacity, where a small proportion of the bottom row of barrels is syphoned off, blended and bottled. The space left in those barrels is then topped up from the row of barrels above them which is a slightly younger blend. Subsequently that second row is topped up from a third row of barrels which is a slightly younger blend again, and so the process continues until current vintage material is being introduced into the solera. This system maintains, age, quality and consistency of the wine.

VINTAGE REPORT: Fruit has been sourced during vintages that are conducive to high Baume rich flavour-some grapes over the last 30 plus years.

FOOD RECOMMENDATION: Great after dinner with coffee.

CELLARING: Being a Tawny the ageing has already been achieved in the barrel.

Shamrockcream.
Creamy, with subtle milk chocolate tones. The bouquet of soft cream has lifted Whisky notes. The palate is rich with complex vanilla and chocolate flavours. Long lasting flavour and excellent mouthfeel combining thick viscous cream lifted by the Irish Whisky.

STYLE DESCRIPTION: The combination of Whisky and cream has long been recognized and enjoyed for it's mouthfilling richness and mellowness. A complex, rich palate is presented with Irish Whisky and full cream flavours enhanced by vanilla and chocolate.

COCKTAIL RECIPES: Pour over ice or mix with milk. cs cowboy – 20ml butterscotch, 10ml shamrock cream Layer in shot glass, pour tzr butterscotch then shamrock cream or pour over ice and sip.the ultimate milk shake – butterscotch, coffee liqueur, shamrock cream, milk, chocolate topping Pour into blender or cocktail shaker, mix well and indulge.
