RASCALS PRAYER CABERNET MERLOT
Deep red with vibrant purple hues. A rich bouquet of plum and blackcurrant with an earthy oak hint. Full flavoured, with ripe plum and berry fruit characters providing a round palate feel. Fruit and oak tannins also contribute to a well balanced wine with good structure and persistent finish.

Oak Treatment: French Oak

VINIFICATION: The fruit was machine harvested in mid March to ensure the fruit retained its integrity and structure. The fruit was destemmed and crushed to static fermenters where it was immediately inoculated with a yeast strain designed to enhance colour and varietal character. Fermentation progressed for approximately 6 days between 20 - 25°C . Draining and pressing occurred at 1 Be. Primary fermentation concluded in stainless steel with induced malolactic fermentation occurring shortly after. The wine was stabilized at 4°C then racked and coarsely filtered, then aged on French Oak for 10 months. The wine was filtered again and prepared for bottling.

VINTAGE REPORT: The 2006 season started with an early budburst. Seasonal growing conditions were ideal, with spring and summer being relatively dry and cool. Vintage began ten days earlier than last year. Ideal ripening conditions continued with warm days and cool nights and drier than average conditions during March. Crop yields were variable, although generally down on average, and down significantly on last year. The variability in yield and cool weather resulted in a long ripening period for each variety. However, varieties ripened concurrently making a relatively condensed vintage. Fruit condition and quality was generally excellent with the ideal season. High colour levels were found in red varieties.

FOOD RECOMMENDATION: Barbecued lamb brushed with rosemary and garlic will enhance the fuller flavours of this wine.

CELLARING: The ripe fruit characters of this wine are delicious and will be best enjoyed over the next 2 years.

RASCALS PRAYER CHARDONNAY
Medium straw with greenish tinges. The inviting bouquet of lifted pineapple and melon fruit is perfectly balanced with subtle, perfumed French oak. These characters extend onto the palate, while the natural acidity offers a clean, crisp finish.

VARIETY: Chardonnay

REGION: Riverina

WINEMAKERS: Rod Hooper, Danny Toaldo, Sean Hampel

TECHNICAL SPECIFICATIONS:Alcohol: 13.9% PH: 3.25 Total Acid: 6.62g/l Residual Sugar: 5.8g/l Oak Treatment: French Oakfor 3 months

VINIFICATION: Machine harvested at night in early February 2006. The fruit was immediately destemmed and crushed. Only free run juice is used to make this wine and it was drained to tank to be cold settled for 48 hours. The clear juice is racked and transferred to a fermentation tank, which is then inoculated with a special yeast designed to retain and enhance fruit flavours. The wine underwent cold fermentation over a two week period. The wine saw French oak throughout fermentation and stabilisation. The resultant wine was fined and cold stabilized at -2°C and left on lees for up to 3 months. Once again the wine is racked and then filtered before blending and bottling.

VINTAGE REPORT: A mild, wet Winter and mid Spring storms, ensured good fruit set. Unusually warm weather late December ensured crops levels remained manageable. Vintage began approximately two weeks later than the previous year, with aromatic and light bodied white varieties commencing on the 9 February and the first medium bodied reds harvested on the 22 February. Weather conditions through harvest remained warm and dry allowing harvest to continue through to the middle of May with little pressure.

FOOD RECOMMENDATION: The gentle flavours of Spanish paella will work well with this wine.

CELLARING: The fruit flavours of this wine are well balanced and should be enjoyed while they are young and fresh.

RASCALS PRAYER OLD VINE SHIRAZ
Deep crimson with vibrant red hues. Generous ripe plum, berry fruit with vanillin oak. This full flavoured Shiraz has plenty of sweet plum, blackberry fruit upfront with integrated oak . The palate is well structured with soft fine tannins and good fruit weight.

VARIETY: Old Vine Shiraz

TECHNICAL SPECIFICATIONS: Alcohol: 14.0% PH: 3.40 Total Acid: 6.53g/l Residual Sugar: 5.4g/l
Oak Treatment: French and American Oak

VINIFICATION: Sourced from vines over 30 years old. The fruit was machined harvested. This was to ensure the fruit retained its integrity and structure. The fruit was then crushed and destemmed into open concrete fermentation vessels with heading down boards. This juice was fermented for seven days with daily pump overs taking place. The wine was then matured in French and American hogshead oak barrels for 12 months.

RASCALS PRAYER SAUVIGNON BLANC
Pale green gold in colour. The bouquet has lifted tropical and passionfruit notes. The lush full palate has good fruit weight with fruit salad characters, finishing long and crisp with excellent balance.

VARIETY: Sauvignon Blanc

REGION: South East Australia

WINEMAKERS: Rod Hooper, Danny Toaldo, Sean Hampel

TECHNICAL SPECIFICATIONS: Alcohol: 12.0% PH: 3.27 Total Acid: 7.1g/l Residual Sugar: 5. 8g/l Oak Treatment: None

VINIFICATION: To maintain fruit freshness harvest took place in the cool of the night. The grapes were immediately crushed and must chilled. The juice was drained and the skins gently pressed. The resulting juice cold settled, then racked for fermentation using aromatic yeast. Fermentation was carried out between 10- 15C for 10 days. Bottled early to retain freshness.

VINTAGE REPORT: The 2007 vintage was one of the earliest on record due to the drought conditions, resulting in well below average yields. Warm January temperatures and lack of adequate soil moisture earlier in the season together with a cold spring, led to low yields in the vineyards but outstanding fruit quality being delivered to the winery.

FOOD RECOMMENDATION: Perfect with fish and Thai or Chinese cuisine.

CELLARING: An exceptional vintage. Drink now or until 2008.

RASCALS PRAYER VERDELHO
Clean, fresh tropical fruit aromas with a well weighted palate of soft mouth filling fruit salad fruit flavours and balanced clean acidity on the finish.

TECHNICAL SPECIFICATIONS:
Alcohol: 13.5% PH: 3.13 Total Acid: 6.42g/l Residual Sugar: 7.5g/l Oak Treatment: None

VINIFICATION: Grapes were harvested at optimum ripeness at about 13 Baume then air bag pressed to minimise phenolics and retain fruit flavours.Fermented in stainless steel with no oak influence to deliver fruit purity.Stabilised and filtered then bottled in April 2007 to retain fruit freshness and vitality of the wine.

VINTAGE REPORT: 2007 was an outstanding vintage in quality terms with substantial reductions in vineyard yields induced by drought and cold spring conditions. The low yields translated into concentrated fruit flavours at vintage.

FOOD RECOMMENDATION: Medium hot Indian or more fragrant Thai dishes work well with the flavours in this Verdelho.

CELLARING: Verdelho is best drunk young, making the most of its delightful fruitcharacter.
