PISCO WITH ALGARROBINA CREAM
The Algarrobo is a perennial tree that can reach up to 10 meters in height and produces a fruit with very hard seeds that was used ages ago as a weight measurement for noble and precious metals.
The algarroba, fruit of the algarrobo known in Peru as " the tree of life" is rich in sucrose, glucose, fructose and fiber. Also contains vitamins A,B1,B2,D,iron,calcium,phosphor and tannin. It's highly appreciated for the elaboration of pastries. With the mature fruits of the algarrobo, a boiled preparation is done where the natural sugars are extracted. Then it is pressed and with the resultant extract,it is filtered and evaporated to achieve a solid final result. Its a great source of nourishment due to its proteins and vitamins. The algarrobina in Peru, prepared with milk, Pisco, egg, sugar and cinnamon its an exquisite liquor that its served cold. Actually the Algarrobina cocktail is consumed at great scale in Peru.
